Nachos Grande
Typically I'm a healthy eater but during shelter in place I have definitely have not been eating healthy. My goal on this site was to post healthy recipes but you will be seeing a mix of healthy and not-so-healthy recipes! I've decided that's ok and I know I will get back to a healthier lifestyle soon!

I made this the other night when I was craving nachos. I really like when my nachos have a lot of flavor and cheese and this recipe did not disappoint!
Ingredients:
1 can Campbells condensed cheddar cheese soup or fiesta nacho cheese soup- (I used fiesta)
1/2 cup chunky salsa
1 pound ground beef
1 small onion
5 cups tortilla chips
1 medium tomato, chopped
1 jalapeño pepper, sliced- (I did not use this since the soup had it in it).
(I added taco seasoning to my meat which gave this dish a ton of additional flavor!)
Directions:
Step 1: stir the soup and salsa in a saucepan
Step 2: Cook the beef and onion over medium- high heat until meat is browned. Pour off any fat. Stir in 1/2 cup of the soup mixture and cook until hot and bubbling.
Step 3: Heat the remaining soup until hot and bubbling
Step 4: Place the chips on a platter and top with beef mixture. Spoon remaining soup mixture over the beef mixture. Top with tomato and jalapeños.
I added refried beans and shredded cheddar cheese to mine. You can definitely get creative and add additional toppings like black beans, avocado, sour cream and corn. Whatever you like!
